Nepali coffee is young — that's what makes it interesting. We work directly with farms across three regions, cup every lot, and roast to draw out what's actually in the bean. Ask for the flight: three side-by-side hand-drips, no two alike.

Day 1

Origins of Nepali coffee

How beans grow at altitude in Gulmi, Lalitpur, and Kavre — and what makes them taste the way they do.

Day 2

Roast theory & cupping

Drum-roast fundamentals; calibrating your palate with a guided cupping flight.

Day 3

Espresso, dialed in

Grind, dose, yield, time. Pulling a clean shot you can defend with numbers.

Day 4

Milk, steam, latte art

Texturing micro-foam, free-pour heart and tulip, troubleshooting.

Day 5

Pour-over & cold brew

V60, Origami, immersion. Recipe design for the bean in front of you.

Day 6

Service, menu & take-home

Building a small menu, hosting customers, packaging your own roasts.
